Tasting Notes
Almond paste, mild citric acid and distant florals, this coffee is incredibly well balanced and super approachable. Meant for coffee lovers at all levels. Refined enough for the Q grader who has seen it all, but articulate enough for the home barista.
Brief Overview
Cielo Coffee Roasters was founded in February of 2024 with the intention of buying coffees with an emphasis on traceability.
To us that means understanding as much about a coffee as possible. Producer(s), Varietal(s), elevation, processing, milling exporter, importer etc. The reason being, when you have a deeper understanding and work with producers and suppliers who share that dedication to curiosity, you get a more genuine authentic and purposeful experience when you brew that coffee.
Coffees, including this lot, from the San Vicente Dry Mill in Peña Blanca are, to me, the case study for relationship based coffee buying practices. I went to SCA expo in Chicago in April of 2024 with the objective to connect with the folks from bonaventureproject and begin the process of buying coffees from the producers in Santa Bárbara.
This coffee from Luis Alonso Alvarado is one of the coffees that came from that visit with Bonaventure in Chicago. Bright and clean with soft florals this coffee is what I want to (and do) drink everyday. Enjoy!
