Established in February of 2024, and building upon 16+ years of experience in the Specialty Coffee Industry, Cielo Coffee Roasters is a Boutique Coffee Roaster sourcing highly traceable green coffee that represents the hard work and intentionality of single producers, families and co-ops from around the world.

So what does that mean? It means you will see coffees on our menu that identify not only the producing countries but also specific regions, altitudes, producers and producer groups as well as washing stations. We also seek to find coffees that are unique representations of varietal and processing technique. Truly coffees that represent their terroir as much as their producers intention

A Labor of Love ... But there is another side of quality sourcing. Something more "extrinsic" to the experience. That is the people and businesses that choose to participate in this industry. You have heard it before but I’ll say it again, Specialty Coffee is a labor of love from start to finish and each role is incredibly important. It takes extreme care to produce high quality cherry. It takes extreme care to process, both at the wet mill and dry mill. It takes extreme care to get freshly milled coffee from producing countries to consuming countries. Then there is the question of storage, shelf life, roasting, grinding , brewing and serving. Each participant plays a critical role and knowing who is handling the coffee has extreme value and meaning. We can not and will never claim to have done it alone.

We are not the first to work within this framework for sourcing green coffee but we are building our menu in search of a way that we can expand upon it in our own unique way. Always learning.

But with all of that in mind, we are sourcing coffees in a very selfish manner. We are sourcing coffees that we want to drink but the coffees we want to drink fall within what is outlined above, coffees that express the story of their caretakers.
